1# ground beef 2-3T butter (or Ghee) 1 onion, finely chopped 1T tumeric 2t black pepper 2 garlic cloves, finely chopped 2 chiles, dried, finely chopped 2T Coriander, ground 1t ground Cumin We use a food-processor to chop the onions - the larger they are, the harder it is to keep the burgers from falling apart. If using butter, you may want to use a bit more and clarify it first. (melt and remove the floating whitish stuff.) Fry the onion, garlic, chilis, in butter until browned. Add tumeric, pepper, toriander, and cumin. Cook for 2-3 minutes. Let cool for 5-10 min. WARNING! You're about to add something warm to ground beef. This is asking for trouble if you don't cook your burgers through. I usually do the prep work before a BBQ, so there're a good couple hours of bacterial growth before they go on the grill. I'm not kidding: Rare Ghost Burgers are not a good idea. Mix onion/spice concoction with ground beef. Form patties, grill.
