Raita (Cucumber Yogurt Dip) 1/2 small cucumber, peeled, seeded, and finely grated 1/2 t salt 1 T finely chopped fresh mint 8 oz whole milk yogurt (1 cup) drained. Sprinkle the grated cucumber with the salt; set in a colander to drain for 30 minutes, then squeeze out the excess juices. Add the drained cucumber and mint to the yogurt and whisk to combine; cover and refrigerate until ready to serve.
